Why does the Coax MG go bye-bye?

Its because when the gun is hit the gerbils have only one place to hide....in the barrel of the Coax MG!!

I can't give you an authoritive answer, but you might consider that a gun hit is assumed to damage (jam) the trunnions, which would make the coax unaimable too.
