For vehicles in general it's easy: Shift + V toggles vehicles on and off. To make specific units invisible just replace all their textures with pink ones. As for off map artillery: You can allready see the shells falling down. If you want to see the guns they aren't off map, are they, and are therefore represented by the relevant on map units? I played the DEMO in hotseat mode with my friend.. I was Axix.. Crushing victory for me! I hided my tanks behind the forest, and when the allies tanks came... And I'm pretty sure you can use any mods you want, provided that the unit is available in the demo.
